Technically, they're shown to be quite fragile in the films, dying to 1 tail stab, needing to rest and heal after taking 1 bullet, etc.

It was only the Super Predators n shit that would just deflect bullets

Nah, the films are probably the worst source of lore for Predators.
When we made Predators we "Incorporated" film lore, meaning the films weren't the primary source of lore for Predators.

Comics, video games and books were the primary source for our guidelines on Predators.
In all fairness that's probably changed at this point with current CM team, but i'm just letting you know the original backing wasn't the films.

There's also a lot of inconsistencies with the films. As you pointed out at times Predators need to rest and heal from minor wounds.. and then other times their armor deflects bullets or they take multiple gun shots to the chest and keep on trucking.
Point being, shits all over the place in the films.

Here's a couple clips for movie comparison which is all over the fucking place.
https://www.youtube.com/watch?v=YhSxOPK0gDg - Multi shotgun shots with no armor and he's good.
https://www.youtube.com/watch?v=yuL1JKsUpvQ - Rifle shots that they just shrug off?

Imagine putting a warrior that jumps around vertically and sneaks into a 2D game with no space to maneuver

Technically you can just "hide" the sprite when "jumping" similar to how burrower sprite just gets hidden when it "burrows"

Does this mean you can go around right clicking to find burrowers?

Maybe? But I doubt it, the window of time where they're burrowed isn't really that long and most of the time you'll see them do it anyway.
