Like others have said, playing xeno gives you a good hands on experience with the maps. You can also observe rounds and roam about them as a ghost to try and get a good mental picture of them.

Play the map. Or ghost and look around.

Wait for HvH round and try to navigate trough caves to lambda, but with lights turned off.
That was fun experience and helped me alot with east side of Big Red caves.
Xeno is the easy way to learn caves, but if you need to learn the hard way unga pfc rush into them. When it's life or death, you'll learn from your mistakes (or just ghost when you die)

What others have said: Experience.
That being said, there is only one way out of the eastern caves if you don't remove the podlocks on either Lambda or Eta (Or use vents as xeno).
You should learn its location well, it's just east of the Eta entrance and south of Lambda entrance.

No matter how you put it, nobody truly has caves perfectly memorized. So remember where things are and just cross your fingers as you randomly go for a path to them. As long as you remember chokes you're usually fine.
